Ingredients:

1000 g fava beans
3000 g water
300 g Kornfond
2 zittauer or shallot onions

1 fennel – sliced into quarters
500 g zittatuer onions – sliced into quarters
Neutral oil – rapeseed oil

50 g butter

Soak the fava beans in twice the amount of water overnight in the fridge.

Strain the beans and rinse it under running water for 2 minutes.

Add the fava beans to a pot with the rest of ingredients. Cook the beans for 40-45 minutes until soft.

Strain the water from the beans and save the water for other applications.
Roasted onions and fennel + fava "mash"

Mix fennel, onions, oil and sea salt and place in a baking tray. Bake in the oven at 180C for 20-25 minutes – or until soft and caramelized.

Mix the hot fava beans with Kornfond and butter. Stir the mixture so it will break up the fava beans into a more cohesive texture.

Gently mix the onions and fennel into the mash.
