Ingredients:
Nocla flavouring:
250 g butter
2 pcs. onions – finely chopped
2 cloves garlic – finely chopped
5 sprigs of thyme
30 g Legume Miso
3 kg baking potatoes
Flaky salt

Melt the butter in a saucepan and add the remaining ingredients.

Let it gently simmer for a few minutes.

Allow the mixture to cool slightly before use – it should remain liquid.

Peel the potatoes and slice them thinly using a mandoline. Toss the slices with the butter mixture and a generous amount of salt.

Line a gastronorm tray with baking paper and layer in the potato mixture. Roast at 180°C for approx. 60 minutes.

If desired, press the baked Pommes Anna by placing a suitable tray with weight on top. Chill to set.

Once cold, cut into portions. Pan-fry until crisp on one side, then finish heating through in the oven.
