Ingredients:
Nocla flavouring:
100 g miso made from yellow peas
100 g Legume Shoyu
20 g vinegar (e.g. apple, cherry, or plum)
30 g brown sugar
50 g chili paste
2.5 kg chicken wings
BBQ sauce
Fine salt
2 pcs. chilies – thinly sliced
Coriander
BBQ sauce
Miso made from yellow peas
Legume Shoyu
Vinegar
Brown sugar

Mix all ingredients in a bowl.

Adjust the taste with more acidity or chili paste if needed.

Toss the chicken wings with 90% of the BBQ sauce and fine salt. Let them rest for at least 1 hour – preferably overnight.

Arrange them in a single layer on baking trays. Bake at 200°C for about 20 minutes.

Remove from the oven and coat with the remaining BBQ sauce. Bake for another 5 minutes at 200°C.

Place the hot chicken wings in a serving bowl and garnish with plenty of coriander and chili.
