Fava Bean Salad with Fennel & Radishes

Fava bean salad is a legume-based salad where beans get a fresh lift from lemon, Legume Shoyu, and herbs. Perfect as a light lunch or side dish.

Ingredients:

Nocla flavouring:

1 kg fava beans

3 liters water

3 dl Kornfond

2 pcs. onion

Parsley stalks, thyme, etc.

1 pcs. onion – finely chopped

5 pcs. radishes – thinly sliced

1 bunch herbs, finely chopped – parsley or chives

100 g extra virgin olive oil

Zest from 1 lemon

Juice from 1 lemon

100 g Bælgfrugt Shoyu

Plenty of freshly ground black pepper

Optional: finely chopped fennel fronds

Preparing fava beans

Soak the fava beans overnight in the fridge with twice their volume of water.

Drain and rinse the beans.

Place the beans in a pot with fresh water, Kornfond, onion, and herbs. Simmer over medium-low heat for about 40-45 minutes until tender.

Drain, reserving the liquid for other uses if desired.

Lemon juice

Black pepper

Optional: finely chopped fennel fronds

While still warm, toss the fava beans with olive oil, lemon juice and zest, Legume Shoyu, and plenty of black pepper.

Let them marinate for at least 30 minutes before combining with the remaining ingredients. Serve in a suitable bowl or plate.
