Braised new onions with thyme and bay leaves

A simple and tasty addition to various dishes.

Ingredients:

Nocla flavouring:

15 new onions with top

Neutral oil – grapeseed oil

5 sprigs of thyme – preferably lemon thyme

2 sprigs of bay leaves – preferably fresh and not dried

100 g Kornfond

Optional: apple cider vinegar or balsamic fruit vinegar

Oven cooking

Trim the root/bottom of the onions and cut them in half lengthways. Remove the outer layer of the onions. Rinse the onions soaked in water for a couple of minutes to get rid of the dirt.

Mix the onions with oil, thyme and bay leaves and place them in an oven tray/gastro tray. Roast the onions in the oven at 180C for 10-15 minutes.

Take the tray out of the oven, add Kornfond and mix well.

Place in the oven again at 180C and cook the onions 10 minutes more – the onions should feel soft but not mushy. Season with vinegar.

Pan cooking

Place the onions in a pan with a thin layer of oil. Place the cut surface into the pan and then add the herbs.

Roast at medium heat for around 15 minutes and look for a good brown and caramelized colour. Add Kornfond and turn the onions.

Roast for another 10 minutes - the onions should feel soft but not mushy. Season with some vinegar.
