Tomato Salad with Raspberry Vinegar & Aged Cheese

A simple yet flavourful tomato salad with deep umami from Legume Shoyu and a savoury touch from grated cheese.

Ingredients:

Nocla flavouring:

2 kg tomatoes – a mix of different sizes and colours

3 pcs. spring onions – thinly sliced

100 g extra virgin olive oil

30 g raspberry vinegar

20 g Legume Shoyu

200 g "Vesterhavsost" or similar aged cheese

Optional: freshly ground black pepper

Tomato salad

Clean the tomatoes and cut them into suitable pieces.

Marinate the tomatoes in olive oil, raspberry vinegar, Legume Shoyu, and optionally black pepper for about 20 minutes.

Toss gently with the sliced spring onions.

Finish by topping with plenty of grated cheese before serving.
