Summer Salad with Shoyu Vinaigrette

A fresh and crisp summer salad combining crunchy vegetables with a tangy-sweet shoyu vinaigrette.

Ingredients:

Nocla flavouring:

5 pcs. carrots – cut into thin batons

200 g green beans – sliced lengthwise

1 bunch spring onions – thinly sliced

1 pcs. cucumber – cut into thin batons

80 g Legume Shoyu

80 g water

20 g brown sugar

2 cloves garlic – finely chopped

1 pcs. chilli – finely chopped

20 g malt vinegar

1 bunch coriander – leaves picked

1 bunch mint – leaves picked

1 pcs. chilli – sliced into thin rings

Green beans

Spring onions

Cucumber

Prepare all vegetables and cut them into thin pieces.

Store them under a damp cloth to keep them fresh.

Optionally, blanch the green beans in salted water for 1 minute.

Shoyu vinaigrette

Brown sugar

Garlic

Chili

Malt vinegar

Dissolve the sugar in water, malt vinegar, and Legume Shoyu. Then add the chilli and garlic.

Let the vinaigrette sit for at least 1 hour to develop flavour.

Arrange the prepared vegetables in a deep plate.

Garnish with coriander, mint, and sliced chilli. Drizzle the vinaigrette over the salad just before serving.
