Bring balance to your dishes with Nocla's natural shoyu made from Danish legumes and grains
The latest addition to Nocla’s umami universe is Legume Shoyu (Bælgfrugt Shoyu)– a light seasoning sauce made from Danish organic fava beans and Øland wheat.
We ferment the ingredients with koji spores to enhance deep umami. Fava beans share many qualities with the soybeans traditionally used in soy sauce but come with a significantly lower climate footprint.
With less salt and a well-balanced flavour, Legume Shoyu ties your dishes together without overpowering the natural taste of the ingredients.
This shoyu is ideal for sushi, stews, vegetables, vinaigrettes, and dressings.
