We fight for natural flavour to become second nature in modern food production.
Agenda
At Nocla, we believe that flavour should come from natural ingredients and thoughtful craftsmanship – not additives. That’s why we make fermented, clean-label flavour solutions that are unique in taste and built to meet the demands of a changing food industry where sustainability and traceability are no longer optional.
As flavour pioneers, great taste is at the centre of everything we do. We combine deep culinary insight and industrial know-how. Our solutions are built to perform with consistent flavour, functionality, and efficiency at scale.
Our work is driven by a simple ambition: to make it easier to produce food with care – even in a time of climate change, scarce raw materials, and rising demands on responsibility. We see fermentation as a crucial tool to unlock better flavours, while using the resources we already have.
Responsibility
We believe responsible choices should be the obvious and simple ones. Because good flavour and responsibility go hand in hand.
Development and innovation
We work to simplify life for the food industry without simplifying flavour. Our natural flavour solutions are easy to use and deliver strong, consistent results.
Health
We challenge the industry’s reliance on additives. Flavour should come from nature – not from synthetic shortcuts.
Climate and economy
We fight for sustainable choices that are also operationally sound and economically viable.
Craft and quality
We stand for a new approach to flavour – rooted in Nordic clarity, professional craft, and deep respect for ingredients. To us, it’s not just about food – it’s about values.
Innovation
Nocla.bio is no coincidence. To us, bio means biodynamic, biodiversity, and bio solutions. Our ambition is to harness the power of nature and our technical know-how to give something back to the environment.
Every flavour solution and innovation at Nocla begin with two priorities: flavour and responsibility. We aim to disrupt popular flavour categories, that are currently relying on ingredients harmful to the climate and public health, by creating innovative and responsible alternatives – completely natural.
We work in close co-creation with food producers to develop deep natural flavour that meet real-life needs.
Sustainability
Our greatest ambition is to create products that not only deliver outstanding taste and quality but also contribute to a more responsible and sustainable food culture.
Carbon footprint
Fermentation is one of the most resource-efficient ways to produce flavour. Using nothing but time, temperature, and natural microorganisms, we transform raw materials into complex flavours without energy-intensive processing.
We work exclusively with organic, Danish ingredients – and we use the entire raw material.
Our flavour experts continuously explore how to upcycle side streams and leftovers from other productions, ensuring that nothing goes to waste. Everything is integrated into our fermented flavour solutions.
B Corp Pending
We are very proud to be on the path to a full B Corp certification. The B Corp certification is the top standard for organisations that strive to use business as a force for creating a positive change.
This commitment challenges us to uphold the highest standards of social and environmental responsibility while guiding us in embedding sustainability across every part of our business.
At Nocla, responsibility is a mindset that guides everything we do. From how we work within our team and collaborate with partners to how we develop flavours for the food industry.
Our B Corp Pending status is an important milestone bringing us closer towards our ambition to contribute to a more responsible food industry – and we are actively working towards becoming a fully certified B Corporation in 2025.
Quality assurance
We are constantly working to make responsible flavour accessible to the food industry.
Making this possible requires the highest standards, which is why Nocla operates under three key ISO certifications:
- ISO 9001: Quality Management
- ISO 14001: Environmental Management
- ISO 22000: Food Safety
These certifications form an important part of our foundation, ensuring that we operate to the highest standards of quality, sustainability, and food safety across every part of our business.
